Zucc Bread (6)

Baking up a storm for our family vacation … Gram’s Zucchini Bread is definitely on the list of things I think of when I think of Summer … and Fall, and Winter.  There are always some Zucchini Muffins in Gram’s freezer.  Here is her recipe

Ingredients

  • 3 cups Flour
  • 1 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • Pinch of Salt
  • 2 cups Sugar
  • 1 cup Oil
  • 3 Large Eggs
  • 3 teaspoon Vanilla
  • 3 cups (or so) of Shredded Zucchini
  • 1/2 cup Walnuts OPTIONAL
  • 1/2 cup Raisins OPTIONAL

Technique

  • Preheat oven to 325 degrees, grease and flour 2 loaf pans … I use parchment paper and Pam for baking.
  • Grate 4 small zucchinis on a box grater

  • Sift dry ingredients
  • Mix oil, sugar, eggs & vanilla by hand, add zucchini
  • Stir in dry ingredients just until incorporated
  • Add nuts & raisins I DON’T

  • Pour batter into the prepared loaf pans
  • Bake for 1 hour & 15 minutes, or until a tester comes out clean.

This recipe makes 12 large muffins and a whole bunch of mini muffins …
