Baking up a storm for our family vacation … Gram’s Zucchini Bread is definitely on the list of things I think of when I think of Summer … and Fall, and Winter. There are always some Zucchini Muffins in Gram’s freezer. Here is her recipe
Ingredients
- 3 cups Flour
- 1 1/2 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- Pinch of Salt
- 2 cups Sugar
- 1 cup Oil
- 3 Large Eggs
- 3 teaspoon Vanilla
- 3 cups (or so) of Shredded Zucchini
- 1/2 cup Walnuts OPTIONAL
- 1/2 cup Raisins OPTIONAL
Technique
- Preheat oven to 325 degrees, grease and flour 2 loaf pans … I use parchment paper and Pam for baking.
- Grate 4 small zucchinis on a box grater
- Sift dry ingredients
- Mix oil, sugar, eggs & vanilla by hand, add zucchini
- Stir in dry ingredients just until incorporated
- Add nuts & raisins I DON’T
- Pour batter into the prepared loaf pans
- Bake for 1 hour & 15 minutes, or until a tester comes out clean.
This recipe makes 12 large muffins and a whole bunch of mini muffins …
